Method
- Preheat oven to 160°C. Line 2 baking trays with baking paper.
- In a large bowl, place the oats, flour, spices, coconut, sugar, nuts and apricots.
- In a small jug, place the remaining ingredients and whisk to combine. Add to the dry ingredients and stir well.
- Shape mixture into small balls. Flatten with a fork. Bake for 15 minutes until light golden.
- Cool. Store in an airtight container for up to 4 days.
