Ingredients
  

  • 1 cup Oats
  • 1 cup Flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/2 cup desiccated coconut
  • 3/4 cup caster sugar
  • 1/4 cup chopped nuts
  • 1/4 cup dried apricots, finely chopped
  • 1 tsp baking soda
  • 4 tbsp golden syrup
  • 1/2 cup canola oil
  • 1 egg, lightly beaten

Method
 

  1. Preheat oven to 160°C. Line 2 baking trays with baking paper.
  2. In a large bowl, place the oats, flour, spices, coconut, sugar, nuts and apricots.
  3. In a small jug, place the remaining ingredients and whisk to combine. Add to the dry ingredients and stir well.
  4. Shape mixture into small balls. Flatten with a fork. Bake for 15 minutes until light golden.
  5. Cool. Store in an airtight container for up to 4 days.
